Calamar en deux textures \u2013 beignet de calamar aux oignons confits dans son encre, tartare de calamar marin\u00e9 \u00e0 la mayonnaise, citron caviar et wasabi.
Consomm\u00e9 de seiche et gingembre avec \u00e9cume de bajoue ib\u00e9rique grill\u00e9e.
